When a person eats a carbohydrate containing food, their blood glucose rises, but not all carbohydrates raise blood sugar at the same rate. The amount which a food raises the blood sugar three hours after eating is known as its glycemic index. Eating low GI foods may help avoid blood sugar spikes.
